I'm going to be getting a Seagull Guitar 12-string soon, I think. The one at the store is not A/E set up.
What is the best way to set it up so I can plug it in (with out using a mic preferably).

Adding a pickup to an acoustic mag or piezo or what?

This is truly a determination of how much you want to spend. The best is a piezo/internal mic combo (Fishman probably makes the best). The easiest and cheapest of course is a sound-hole pop-in. To a degree, you get what you pay for. There are a few pretty reasonably decent pop-ins (or stick-ons) for moderate prices though. The Shadow 2000 is decent (about $75 US) and the Seymour Duncan Acoustic Tube (about $75 US) aren't bad. I have both. The 2000 sticks on and has both volume and tone conrols, the Tube pops in and has a volume control. (I think volume control at least is a must-have on a pickup). There are now also pop-in mics in the $100 or so range (which I haven't tried) that might not be bad. Try a few out. Of course nothing is as good as a mic, but they are pretty convenient sometimes, and some aren't too bad at all.
Un-plugged is not the same as

About 50% of the time with my acoustic now, I use a mic. But having the piezo in the one I've got is extremely nice, being able to just plug and play makes it easy.
