The Byrds did a few nice ones. "Chestnut Mare" (great tune) and acoustic versions of "Mister Space Man" and "So You Want To be A Rock and Roll Star." The Eagles have several (Desparado, etc). The Doobie Brother's "Black Water" ("...Mississippi moon won't you keep on shinin' on me...").
Those are from bands that would be considered rock-bands but have done country-ish tunes. There are also country-bands who have done some rock-ish tunes, like Johnny Cash that GS63 mentioned. Actually you can take many good country tunes and put a rockish "spin" on them, like Hank Williams (the REAL Hank. Senior of course), Willie Nelson, etc. Or take good rock tunes and put a "country spin" on those. Like Van Morrison's "Tupelo Honey", the Stones' "No Expectations," etc. which are already very country-ish. Even Hendrix's "Hey Joe" works very well done in a solo acoustic country style (I have an arrangement for a few of those should you want it).
You can take many good acoustic tunes (or even electric) and by re-arranging them slightly and applying a few very simple "country techniques" on the guitar as you play them, transform them into very country-sounding tunes.
