I would assume the dreadnought body projects a bigger sound, but how noticeable is the difference?

Depends on the brand of the guitar, but generally the difference is noticeable. Some small-bodies (like vintage Gibsons, as an example) were engineered internally and with a top-wood thickness to compensate for the small body-size and increase its volume, but most don't. They are often easier to play than a dreadnought or jumbo, and if they are amplified there's not a lot of difference of course.
Un-plugged is not the same as

It really depends. A jumbo Takamine (which is slightly bigger than Taylor Jumbos) doesn't hold a candle to my Taylor Jumbos or my Gibson J-185.
A Dean Jumbo even sounds worse than the Takamine.
If you are not buying a guitar w/out a solid top, solid back, and solid sides, your volumic output will be as cheap as a $200 acoustic like those Esteban guitars.

On laminate wood guitars, are all laminates the same, or are there companies that use certain ply laminates?
I read that Seagull or Art and Lutherie have something like three ply laminates (supposedly sounds better than regular cheap lamination). Will that make much of a difference?
