Right: I'm out for a new electro-acoustic, admittedly with the emphasis more on the acoustic than the electric, and I'll have about £600 (what, about $1000?) to spend. I've heard nothing but goodness about the Takamine G series. What can people recommend - if you can give specific models as well as makes, even better.

If you aren't sold on the Acoustic/Electric thing, go check out the Epiphone AJ-500R or -500M. Both are killer sounding acoustic guitars with no electronics and at a very decent price. I just picked one up and I absolutely love it.
If you are really wanting the Acoustic/Electric thing, I'd try Seagull and Alvarez. My first acoustic was an Alvarez with electronics and it's a great guitar.

Do you actually want an acoustic or are you just looking for the 'acoustic sound'? In your price range you could very comfortably hit into either mid ranged electric acoustics (Insert heart felt testimonial for seagull guitars here.) or mid ranged electrics with piezeo pickups.
Honestly for giging and recording purposes it's a lot faster to hit the toggle than it is to change out guitars.
You can also retro fit your fav guitar with a piezeo for about half the price of a new acoustic electric.
Practicality out of the way...
Takamine A/E's are really great guitars in the bang for buck catagory. Ovation's Applause line runs the line from thin bodied stage guitars to 6inch deep bowl modles.
Just remember when shopping. Your electronics must be just as good sounding as the guitar.

Just an idea... Not an actual serving suggestion.

When I was looking for an electro acoustic, I plagued this place (and DADFAD especially) for advice. Takamines came out highly in most peoples opinion, and i checked out a couple locally (EG330 and 520 or something like that). Both were great - the 330 had amazing sounds. I was almost gonna get it when i stumbled across the Crafter TGAE-06 - gorgeous to look at, and when i played it it was just so 'right' - amazing playability and really rich sound. I dont play it through an amp, but the electronics sound really good when i record on the pc. I love it. Dont let the name put you off - Crafter do some great guitars at excellent prices.

When i bought it a few years ago, they were £370/ Theyre discontinued now and the shop near me has em for £232 which is a bargain and a half. I was tempted to buy another as a back up but managed to refrain!

Unfortunately any American guitar that I would recommend would be way over the top after you add the the import duties and such. You can get a much better guitar made in your country for the same $$$. The Takamine G Series is an entry level guitar, although great for what it does, what you would end up paying for one would be a ripoff.
