I just got a new amp. A Polytone Mini-Brute II. It has a knob called "Contour". It says that it "Will boost and cut various frequencies as you rotate the dial". So what frequencies is it boosting or cutting?

Contour knobs are usually parametric EQs. Just an active EQ that is more than likely boosting/cutting frequencies in the 1K Hz(ish) range. So your mids essentially...
Some have a slight affect on the gain as well...

I said some have an affect on gain.
Technically more mids means the signal going to the next stage will be able to clip easier and that means more distortion/overdrive.
