My favorite acoustic artist of all time is Tracy chapman.
Bah, Graeme took lots of my list.
Also, if you'd like to check out some cool stuff, Eric Clapton's unplugged is great.
Or, you could also try some acoustic blues such as Robert Johnson.

Dudes: everything Will and Graeme recommended: +1, Iron and Wine, Johnathan Rice (from the EP, new CD is crappy), The Shins are interesting, and Sufjan Stevens is a fav around here.

All of these are regs on my playlists... I have weird taste, but at least I'm not listening to THREE artists over and over again.
